For the past five months the majority of our meals have originated in our home kitchen. So instead of WFH, let's talk about CFH (cook from home). I am grateful that I had a mom who was adventurous and included me in many of her culinary endeavors. I have yet to find a recipe or a bakery that can match her Red Velvet Cake.
Last weekend I made this unique Cobb Salad with Boiled Shrimp. I'll put the recipe at the end of the blog. This one was floating around social media, however I did make some changes. I am fortunate, living along the Coast, because I have access to fresh Gulf shrimp, crab, oysters and a variety of fish. These are a great foundation for so many delicious meals.
Shout out to Cecil Barnes, owner of Shrimp by the Pound. You'll find him on the corner of Schillinger & Cottage Hill, Wednesday - Sunday. I've been a loyal customer for years.
Aside from boiling the shrimp, this dish took less than 20 minutes to put together. You can sauté the shrimp if you prefer! I'll try to include some tasty ideas every week since it appears that going back to cooking basics is our new normal. Honestly, I love being in the kitchen. It is a great place to funnel my creative energy!

Cobb Salad with Shrimp
Ingredients:
~ 24 boiled or sautéed shrimp
~ bed of greens - Romaine, Spinach or Bibb lettuce
~ 1 ripe Avocado, diced
~ 1 boiled egg, sliced
~ 4 pieces of bacon, cooked and diced
~ 1/2 cup Corn kernels drained
~ Cheese - Feta or Blue Cheese
Tips: You can add black olives, especially if you use feta cheese. Also season your shrimp well. I use Cavender's Greek Seasoning when I sauté shrimp.
Assemble the ingredients in a salad bowl similar to above picture. Drizzle with your favorite salad dressing or create your own. Mix the ingredients below!
Chive Dressing:
~ Fresh chives, chopped
~ 1/3 cup Greek Yogurt
~ 1 tsp. Lemon Juice or juice from 1 lemon
~ Garlic, fresh chopped
~ Salt & Pepper to taste
~ 1/2 tsp. Dijon Mustard
